The Tuscan Extra Virgin olive oil of the San Martino agriturismo is born on the gentle slopes surrounding our property. Constant care throughout every period of the year, from the refined pruning with the Roventini method to meet the needs of each of our plants to organic fertilization, cultivation with grassing up to the use of a latest generation two-phase oil mill with cold extraction and the particular climatic conditions of our territory give our product unique qualities of which we are proud.
The olive grove systems respect the physiological needs of our plants, for us every plant, not just olive trees, is part of the family of our farm.
The care of an olive grove begins with its birth, from when we decided to plant our 2520 olive trees predominantly of the Leccino and Frantoio cultivars. This blend of oils extracted from these two native species gives our oil an organoleptic profile with a prevalence of fruitiness, followed by Fresh Almond, Artichoke and Grass/Leaf with strong bitter and spicy notes.
The 2015 vintage, thanks to a favorable hot summer, contributed to making every note of our “green gold” unique and clean.
